Ingredients

  • 2 Filet Mignon steaks (1.5 inches thick)
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Butter (softened)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Fresh thyme (chopped)
  • 1 clove Garlic (minced)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the filet mignon steaks generously with salt and pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
  4. Sear the steaks for 3-4 minutes on each side until a golden-brown crust forms.
  5. Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes for medium-rare, or until your desired doneness is reached.
  6. While the steaks are in the oven, prepare the herb butter by mixing the softened butter, parsley, thyme, and minced garlic in a bowl until well combined.
  7. Once the steaks are done, remove them from the oven and let them rest for 5 minutes.
  8. Top each steak with a generous dollop of the herb butter before serving.
