Crispy and delicious homemade egg rolls cooked to perfection in an air fryer for a healthier twist on a classic favorite.
Ingredients

- 1 package egg roll wrappers
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup cooked and shredded chicken or pork (optional)
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooking spray
Instructions
- In a large bowl, combine shredded cabbage, shredded carrots, cooked meat (if using), green onions, garlic, soy sauce, sesame oil, salt, and pepper.
- Lay an egg roll wrapper on a clean surface with one corner pointing towards you.
- Place about 2 tablespoons of the filling mixture in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly to enclose the filling. Seal the edge with a little water if necessary.
- Repeat with remaining wrappers and filling.
- Preheat the air fryer to 380°F (193°C).
- Spray the egg rolls lightly with cooking spray.
- Place the egg rolls in the air fryer basket in a single layer, making sure they are not touching.
- Cook for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
- Remove from the air fryer and serve warm with your favorite dipping sauce.
Notes
- Feel free to customize the filling with your favorite vegetables or proteins.
- For a vegetarian version, omit the meat and add extra vegetables.
- Make sure not to overcrowd the air fryer basket for even cooking.
