- 1 teaspoon salt
- 1 cup all-purpose flour
- 3 large eggs, beaten
- 1 cup breadcrumbs (Italian seasoned preferred)

- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Sprinkle the sliced eggplant with salt and let it sit for 30 minutes to draw out moisture. Rinse under cold water and pat dry with paper towels.
- Preheat the air fryer to 375°F (190°C).
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder, oregano, and black pepper.
- Dredge each eggplant slice in flour, dip into the egg, and then coat with the breadcrumb mixture. Ensure each slice is evenly coated.
- Arrange the coated eggplant slices in a single layer in the air fryer basket. You may need to work in batches depending on your air fryer size.
- Air fry the eggplant for 10-12 minutes, flipping halfway through, until golden and crispy.
- In a baking dish, layer half of the fried eggplant slices, half of the marinara sauce, and half of the mozzarella and Parmesan cheeses. Repeat the layers with the remaining ingredients.
- Air fry the layered eggplant parmesan at 375°F (190°C) for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil if desired and serve hot.
