Instructions
- In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, and avocado.
- Add chopped cilantro and lime juice, then season with salt and pepper to taste.
- Drizzle with olive oil if desired and toss gently to combine.
- Serve immediately or refrigerate for up to 3 days.
