Quick and delicious summer meals that are kid-approved and easy to make. Perfect for hot days when you don’t want to spend too much time in the kitchen.


Ingredients

  • 4 medium-sized tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cooked chicken, shredded
  • 1 cup fresh vegetables (bell peppers, cucumbers, cherry tomatoes)
  • 1/2 cup ranch dressing or hummus
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. Lay out the tortillas on a clean surface. Spread ranch dressing or hummus evenly on each tortilla.
  3. Sprinkle shredded cheese on top of the dressing, followed by shredded chicken, and fresh vegetables.
  4. Season with salt and pepper to taste.
  5. Fold the tortillas in half to create a half-moon shape. Brush the outside with olive oil.
  6. Place the folded tortillas on the grill and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy.
  7. Remove from the grill and let cool for a minute before cutting into wedges.
  8. Serve with extra ranch dressing or hummus for dipping.

Notes

  • Feel free to customize the fillings based on your kids’ preferences.
  • These can also be made in advance and stored in the refrigerator for quick meals.
  • Serve with a side of fresh fruit for a complete meal.
