Quick and delicious summer meals that are kid-approved and easy to make. Perfect for hot days when you don’t want to spend too much time in the kitchen.
Ingredients

- 4 medium-sized tortillas
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup cooked chicken, shredded
- 1 cup fresh vegetables (bell peppers, cucumbers, cherry tomatoes)
- 1/2 cup ranch dressing or hummus
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Preheat a grill or grill pan over medium heat.
- Lay out the tortillas on a clean surface. Spread ranch dressing or hummus evenly on each tortilla.
- Sprinkle shredded cheese on top of the dressing, followed by shredded chicken, and fresh vegetables.
- Season with salt and pepper to taste.
- Fold the tortillas in half to create a half-moon shape. Brush the outside with olive oil.
- Place the folded tortillas on the grill and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy.
- Remove from the grill and let cool for a minute before cutting into wedges.
- Serve with extra ranch dressing or hummus for dipping.
Notes
- Feel free to customize the fillings based on your kids’ preferences.
- These can also be made in advance and stored in the refrigerator for quick meals.
- Serve with a side of fresh fruit for a complete meal.
