  • 4 pieces Grilled Lemon Herb Chicken (boneless chicken breasts)
  • 1/4 cup Olive oil (for marinating)
  • 2 tablespoons Fresh lemon juice (for marinade)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 4 cups Mixed greens (for salad)
  • 1 cup Cherry tomatoes (halved)
  • 1 medium Cucumber (sliced)
  • 1/2 cup Feta cheese (crumbled)

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create a marinade.
  2. Add the chicken breasts to the marinade, coating them well. Let them marinate in the refrigerator for at least 30 minutes.
  3. Preheat a grill over medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side, or until fully cooked.
  4. While the chicken is grilling, prepare the salad by combining mixed greens, cherry tomatoes, cucumber, and feta cheese in a large bowl.
  5. Once the chicken is cooked, slice it and serve it over the salad.

Notes

  • Feel free to add other toppings to the salad like avocado or nuts.
