Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the chopped rhubarb, sugar, flour, cinnamon, and vanilla extract. Mix until the rhubarb is well coated.
- Place the pie crust in a pie dish and pour the rhubarb mixture into the crust. Drizzle the melted butter over the top.
- Bake in the preheated oven for 45-50 minutes, or until the rhubarb is tender and the crust is golden brown.
- Remove from the oven and let cool for at least 15 minutes before serving. Enjoy warm or at room temperature.
