Ingredients

- 2 cups basmati rice
- 1 cup mixed vegetables (carrots, peas, beans)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- 3 cups water
Instructions
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute.
- Add chopped tomatoes and cook until soft.
- Add mixed vegetables, turmeric powder, garam masala, and salt. Stir well.
- Add rice and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Turn off the heat and let it rest for 5 minutes before serving.
Notes
- Use any vegetables you have on hand.
- Serve with yogurt or pickle for added flavor.
- This dish pairs well with naan or roti.
