Instructions

  1. Heat olive oil in a pan over medium heat.

  4. Stir in diced tomatoes and Italian seasoning.
  5. Simmer for 10 minutes.
  6. Mix in cooked rice and half of the cheese.
  7. Transfer to a baking dish, top with remaining cheese.
  8. Bake at 350°F for 20 minutes until cheese is melted.
