- 1 pound of ground beef or turkey
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels, frozen or canned
- 1 packet of taco seasoning
- 8 small flour tortillas
- 1 cup of shredded cheese (cheddar or Mexican blend)
- 1 cup of salsa
- Optional toppings: sour cream, avocado, chopped cilantro
Instructions
- In a large skillet, brown the ground beef or turkey over medium heat until fully cooked.
- Add the black beans, corn, and taco seasoning to the skillet. Stir to combine and cook for an additional 5 minutes.
- Warm the tortillas in a separate pan or microwave until soft.
- Spoon the meat mixture onto each tortilla, then top with cheese and salsa.
- Fold the tortillas over to create a taco shape and serve with optional toppings.
