This easy dandelion jelly recipe is a delightful way to use dandelions for a sweet and floral spread perfect for toast or biscuits.

- 2 cups dandelion petals (remove green parts)
- 4 cups water
- 1/4 cup lemon juice
- 1 package (1.75 oz) fruit pectin
- 5 cups granulated sugar
Instructions
- In a large pot, bring the water to a boil. Add the dandelion petals and let them steep for about 30 minutes.
- Strain the dandelion infusion through a fine mesh sieve or cheesecloth into another pot, discarding the solids.
- Add lemon juice and fruit pectin to the dandelion liquid. Stir well and bring to a rolling boil.
- Gradually add the sugar, stirring constantly until dissolved. Bring the mixture back to a boil and boil for 1-2 minutes.
- Remove from heat and ladle the hot jelly into sterilized jars, leaving about 1/4 inch headspace.
- Seal the jars with lids and process in a boiling water bath for 5-10 minutes.
- Let the jars cool completely before storing them in a cool, dark place.
