Ingredients

Scale
  • 2 cups dandelion petals (remove green parts)
  • 4 cups water
  • 1/4 cup lemon juice
  • 1 package (1.75 oz) fruit pectin
  • 5 cups granulated sugar

Instructions

  1. In a large pot, bring the water to a boil. Add the dandelion petals and let them steep for about 30 minutes.
  2. Strain the dandelion infusion through a fine mesh sieve or cheesecloth into another pot, discarding the solids.
  3. Add lemon juice and fruit pectin to the dandelion liquid. Stir well and bring to a rolling boil.
  4. Gradually add the sugar, stirring constantly until dissolved. Bring the mixture back to a boil and boil for 1-2 minutes.
  5. Remove from heat and ladle the hot jelly into sterilized jars, leaving about 1/4 inch headspace.
  6. Seal the jars with lids and process in a boiling water bath for 5-10 minutes.
  7. Let the jars cool completely before storing them in a cool, dark place.
