- 8 oz pasta of your choice (spaghetti, penne, etc.)
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add minced garlic and cherry tomatoes to the skillet. Cook for an additional 2-3 minutes until the tomatoes soften.
- Add the cooked pasta to the skillet and toss everything together. If needed, add a splash of pasta water to help combine.
- Remove from heat and stir in grated Parmesan cheese until melted and creamy.
- Garnish with fresh basil if desired and serve hot.
