Ingredients

  • 8 oz pasta of your choice (spaghetti, penne, etc.)
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Add minced garlic and cherry tomatoes to the skillet. Cook for an additional 2-3 minutes until the tomatoes soften.
  5. Add the cooked pasta to the skillet and toss everything together. If needed, add a splash of pasta water to help combine.
  6. Remove from heat and stir in grated Parmesan cheese until melted and creamy.
  7. Garnish with fresh basil if desired and serve hot.
