- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1 cup crushed crackers (such as Ritz)
- 2 tablespoons melted butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, frozen mixed vegetables, and half of the cheddar cheese. Season with salt and pepper to taste.
- Transfer the mixture into a greased 9×13 inch baking dish and spread evenly.
- In a separate bowl, mix the crushed crackers with melted butter and the remaining cheddar cheese. Sprinkle this mixture evenly over the chicken mixture in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
- Let cool for a few minutes before serving.
