Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels, frozen or fresh
  • 1 cup diced tomatoes
  • 1 packet taco seasoning
  • 8 tortillas
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes.
  2. Add black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine well.
  3. Cook for an additional 5-10 minutes until heated through. Season with salt and pepper to taste.
  4. Warm tortillas in a separate pan or microwave.
  5. To assemble, spoon the beef and bean mixture onto each tortilla, top with shredded cheese and avocado slices.
  6. Garnish with chopped cilantro if desired. Roll up the tortillas and serve.
