- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn kernels, frozen or fresh
- 1 cup diced tomatoes
- 1 packet taco seasoning
- 8 tortillas
- 1 cup shredded cheese
- 1 avocado, sliced
- Salt and pepper to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes.
- Add black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine well.
- Cook for an additional 5-10 minutes until heated through. Season with salt and pepper to taste.
- Warm tortillas in a separate pan or microwave.
- To assemble, spoon the beef and bean mixture onto each tortilla, top with shredded cheese and avocado slices.
- Garnish with chopped cilantro if desired. Roll up the tortillas and serve.
