Ingredients

  • 1 lb chicken breast, diced
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, sliced
  • 2 cups cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced chicken, bell peppers, zucchini, cooked rice, black beans, corn, and taco seasoning.
  2. Drizzle with olive oil and add salt and pepper to taste. Mix well to combine all ingredients.
  3. Transfer the mixture to a large resealable bag or airtight container.
  4. Chill in the refrigerator overnight.
  5. When ready to cook, preheat a skillet over medium heat.
  6. Pour the mixture into the skillet and cook for about 10-15 minutes until the chicken is cooked through and the vegetables are tender.
  7. Sprinkle shredded cheese on top and cover to let it melt before serving.
