- 1 lb chicken breast, diced
- 1 cup bell peppers, chopped
- 1 cup zucchini, sliced
- 2 cups cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced chicken, bell peppers, zucchini, cooked rice, black beans, corn, and taco seasoning.
- Drizzle with olive oil and add salt and pepper to taste. Mix well to combine all ingredients.
- Transfer the mixture to a large resealable bag or airtight container.
- Chill in the refrigerator overnight.
- When ready to cook, preheat a skillet over medium heat.
- Pour the mixture into the skillet and cook for about 10-15 minutes until the chicken is cooked through and the vegetables are tender.
- Sprinkle shredded cheese on top and cover to let it melt before serving.
Notes
- You can substitute the chicken with ground beef or tofu for a vegetarian option.
- Feel free to add any other veggies you like or have on hand.
