Ingredients

  • 2 cups All-Purpose Flour

  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Salt
  • 1 cup Vegetable Oil
  • 4 Eggs
  • 2 teaspoons Vanilla Extract
  • 8 ounces Cream Cheese
  • 3 cups Powdered Sugar
  • 2 tablespoons Lemon Juice
  • 1 cup Decorative Easter Sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the grated carrots, flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine the vegetable oil, beaten eggs, and vanilla. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops.
  6. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  8. In a mixing bowl, beat together the softened cream cheese, powdered sugar, and lemon juice until smooth.
  9. Once the cakes are completely cool, spread cream cheese frosting between the layers and over the top and sides of the cake.
  10. Decorate with decorative Easter sprinkles before serving.

Notes

  • You can add chopped nuts or raisins to the cake batter for additional flavor and texture.
  • For a lighter version, substitute half of the oil with applesauce.
