- 2 cups Carrot Cake
- 2 cups All-Purpose Flour
- 1 1/2 cups Granulated Sugar
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Salt
- 1 cup Vegetable Oil
- 4 Eggs
- 2 teaspoons Vanilla Extract
- 8 ounces Cream Cheese
- 3 cups Powdered Sugar
- 2 tablespoons Lemon Juice
- 1 cup Decorative Easter Sprinkles
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix together the grated carrots, flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, combine the vegetable oil, beaten eggs, and vanilla. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- In a mixing bowl, beat together the softened cream cheese, powdered sugar, and lemon juice until smooth.
- Once the cakes are completely cool, spread cream cheese frosting between the layers and over the top and sides of the cake.
- Decorate with decorative Easter sprinkles before serving.
Notes
- You can add chopped nuts or raisins to the cake batter for additional flavor and texture.
- For a lighter version, substitute half of the oil with applesauce.
