- 2 tablespoons Olive Oil
- 1 cup Fresh Herbs (dill, parsley, thyme)
- 4 cloves Garlic
- 2 pounds Potatoes
- 4 tablespoons Butter
- 1/2 cup Heavy Cream
- 6 cups Mixed Greens
- 1 cup Cherry Tomatoes
- 1/4 cup Balsamic Vinaigrette
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, chopped fresh herbs, minced garlic, salt, and pepper. Brush this mixture over the salmon fillets.
- Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the salmon flakes easily with a fork.
- While the salmon is baking, peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return to the pot. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy.
- In a large bowl, toss the mixed greens with cherry tomatoes and balsamic vinaigrette just before serving.
- Serve the herb-crusted salmon alongside garlic mashed potatoes and the spring salad.
