  • 2 pounds Potatoes
  • 4 tablespoons Butter
  • 1/2 cup Heavy Cream
  • 6 cups Mixed Greens
  • 1 cup Cherry Tomatoes
  • 1/4 cup Balsamic Vinaigrette

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, chopped fresh herbs, minced garlic, salt, and pepper. Brush this mixture over the salmon fillets.
  3. Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the salmon flakes easily with a fork.
  4. While the salmon is baking, peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes.
  5. Drain the potatoes and return to the pot. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy.
  6. In a large bowl, toss the mixed greens with cherry tomatoes and balsamic vinaigrette just before serving.
