This rich and creamy chocolate mousse is made with ripe avocados and sweetened with a sugar substitute, making it a perfect dessert for diabetics.
Ingredients

- 2 ripe avocados, peeled and pitted
- 1/2 cup unsweetened cocoa powder
- 1/2 cup sugar substitute (like erythritol or stevia, adjust to taste)
- 1/4 cup almond milk (or any unsweetened milk of choice)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a food processor, combine the avocados, cocoa powder, sugar substitute, almond milk, vanilla extract, and salt.
- Blend until completely smooth and creamy, scraping down the sides as necessary.
- Taste and adjust sweetness if needed.
- Transfer the mousse to serving bowls and refrigerate for at least 30 minutes to set.
- Serve chilled, optionally topped with fresh berries or a dollop of whipped cream.
Notes
- This mousse can be stored in an airtight container in the refrigerator for up to 3 days.
