Dandelion flower jelly is a unique and delightful treat that captures the essence of springtime. This jelly is made from the vibrant yellow dandelion flowers, which are not only abundant but also edible. - 2 cups dandelion flowers (yellow petals only, washed and stems removed)
- 4 cups water
- 1/4 cup lemon juice (freshly squeezed)
- 1 box (1.75 oz) fruit pectin (like Sure-Jell)
- 5 cups granulated sugar
Instructions
- In a large pot, bring the water to a boil. Once boiling, add the dandelion flowers and simmer for about 10 minutes.
- Remove from heat and let the mixture steep for 24 hours at room temperature, covered.
- After steeping, strain the mixture through a fine mesh sieve or cheesecloth to extract the liquid, discarding the flower petals. You should have about 4 cups of dandelion tea.
- Return the dandelion tea to the pot and add the lemon juice. Stir in the fruit pectin and bring to a rolling boil.
- Once boiling, add the granulated sugar all at once, stirring constantly. Bring the mixture back to a rolling boil and boil for 1-2 minutes, until the sugar is fully dissolved.
- Remove from heat and skim off any foam from the surface. Pour the hot jelly into sterilized jars, leaving about 1/4 inch headspace.
- Wipe the rims of the jars with a clean cloth and seal with sterilized lids. Process in a boiling water bath for 5-10 minutes to ensure a proper seal.
- Allow the jars to cool completely at room temperature. Store in a cool, dark place for up to a year.

- Make sure to gather dandelions from areas free of pesticides or chemicals.
- For a more intense flavor, consider adding additional lemon juice or zest.
- Jelly can be stored in the refrigerator after opening for up to 3 weeks.
