- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chocolate chips
- Pink frosting or icing
- Valentine’s Day sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chips.
- Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
- Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool completely on a wire rack.
- Once cooled, pipe pink frosting on top of the mini cupcakes and sprinkle with Valentine’s Day sprinkles.
Notes
- Feel free to use different colored frosting to match your Valentine’s theme.
- You can also add a dollop of raspberry or strawberry jam on top of the frosting for an extra fruity twist.
- These mini desserts can be made ahead of time and stored in an airtight container.
