Ingredients

- 4 medium cucumbers, peeled and diced
- 1 cup fresh mint leaves, packed
- 1/2 cup plain Greek yogurt
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 clove garlic, minced
Instructions
- In a blender, combine the diced cucumbers, fresh mint leaves, Greek yogurt, vegetable broth, olive oil, lemon juice, salt, black pepper, and minced garlic.
- Blend on high speed until the mixture is smooth and creamy.
- Taste and adjust seasoning if necessary.
- Chill the gazpacho in the refrigerator for at least 1 hour before serving.
- Serve in bowls and garnish with additional mint leaves or cucumber slices if desired.
Notes
- For a spicier version, add a jalapeño or red pepper.
- This gazpacho can be made a day in advance for even better flavors.
