Ingredients

  • 34 pounds beef chuck roast
  • 1 packet Italian dressing mix
  • 1 cup beef broth
  • 1 jar (16 oz) pepperoncini peppers, with juice
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Italian rolls or hoagie buns for serving

Instructions

  1. Place the beef chuck roast in the crockpot.
  2. Sprinkle the Italian dressing mix evenly over the roast.
  3. Add the beef broth, sliced onion, minced garlic, and pepperoncini peppers with their juice.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender and shreds easily.
  6. Remove the beef from the crockpot and shred with two forks.
  7. Return the shredded beef to the crockpot and mix with the juices.
  8. Serve on Italian rolls or hoagie buns with additional peppers if desired.
