- 3–4 pounds beef chuck roast
- 1 packet Italian dressing mix
- 1 cup beef broth
- 1 jar (16 oz) pepperoncini peppers, with juice
- 1 onion, sliced
- 4 cloves garlic, minced
- Salt and pepper to taste
- Italian rolls or hoagie buns for serving
Instructions
- Place the beef chuck roast in the crockpot.
- Sprinkle the Italian dressing mix evenly over the roast.
- Add the beef broth, sliced onion, minced garlic, and pepperoncini peppers with their juice.
- Season with salt and pepper to taste.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender and shreds easily.
- Remove the beef from the crockpot and shred with two forks.
- Return the shredded beef to the crockpot and mix with the juices.
- Serve on Italian rolls or hoagie buns with additional peppers if desired.
Notes
- For extra flavor, you can add sliced bell peppers or mushrooms.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
