Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. In a large skillet over medium heat, heat the olive oil. Add the beef cubes and brown on all sides, about 5-7 minutes.
  2. Transfer the browned beef to the crockpot. Add the carrots, potatoes, onion, and garlic.
  3. Pour in the beef broth and Worcestershire sauce. Sprinkle in the thyme, rosemary, salt, and pepper.
  4. Stir to combine all ingredients well.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef and vegetables are tender.
  6. If you prefer a thicker stew, mix the cornstarch and water in a small bowl until smooth. Stir into the stew and cook on high for an additional 30 minutes.

Notes

  • Feel free to add other vegetables like peas or green beans in the last hour of cooking.
  • For extra flavor, you can add a bay leaf during cooking and remove it before serving.
