- 2 pounds beef chuck, cut into 1-inch cubes
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- In a large skillet over medium heat, heat the olive oil. Add the beef cubes and brown on all sides, about 5-7 minutes.
- Transfer the browned beef to the crockpot. Add the carrots, potatoes, onion, and garlic.
- Pour in the beef broth and Worcestershire sauce. Sprinkle in the thyme, rosemary, salt, and pepper.
- Stir to combine all ingredients well.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef and vegetables are tender.
- If you prefer a thicker stew, mix the cornstarch and water in a small bowl until smooth. Stir into the stew and cook on high for an additional 30 minutes.
Notes
- Feel free to add other vegetables like peas or green beans in the last hour of cooking.
- For extra flavor, you can add a bay leaf during cooking and remove it before serving.
