A hearty and comforting crockpot beef stew that simmers all day for a rich flavor.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and sear on all sides until browned.
  2. Transfer the seared beef to the crockpot.
  3. Add the carrots, potatoes, onion, and garlic to the crockpot.
  4. In a separate bowl, mix together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  5. Pour the broth mixture over the beef and vegetables in the crockpot.
  6. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  7. Taste and adjust seasoning before serving.

Notes

  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the stew during the last 30 minutes of cooking.
  • Feel free to add other vegetables such as peas or green beans during the last hour of cooking.
