A hearty and comforting crockpot beef stew that simmers all day for a rich flavor.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 medium carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and sear on all sides until browned.
- Transfer the seared beef to the crockpot.
- Add the carrots, potatoes, onion, and garlic to the crockpot.
- In a separate bowl, mix together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Pour the broth mixture over the beef and vegetables in the crockpot.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
- Taste and adjust seasoning before serving.
Notes
- For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the stew during the last 30 minutes of cooking.
- Feel free to add other vegetables such as peas or green beans during the last hour of cooking.
