- 2 lbs beef chuck, cut into 1-inch cubes
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons cornstarch (optional for thickening)
- 2 tablespoons water (optional for thickening)
Instructions
- Place the beef chuck in the bottom of the crock pot.
- Add the potatoes, carrots, onion, and garlic on top of the beef.
- Pour in the beef broth and Worcestershire sauce.
- Sprinkle thyme, rosemary, salt, and pepper over the top.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
- If you prefer a thicker stew, mix cornstarch with water to create a slurry and stir it into the stew during the last 30 minutes of cooking.
Notes
- Feel free to add other vegetables like peas or green beans.
- For extra flavor, sear the beef in a skillet before adding it to the crock pot.
- Leftover stew can be stored in the refrigerator for up to 3 days.
