Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional for thickening)
  • 2 tablespoons water (optional for thickening)

Instructions

  1. Place the beef chuck in the bottom of the crock pot.
  2. Add the potatoes, carrots, onion, and garlic on top of the beef.
  3. Pour in the beef broth and Worcestershire sauce.
  4. Sprinkle thyme, rosemary, salt, and pepper over the top.
  5. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
  6. If you prefer a thicker stew, mix cornstarch with water to create a slurry and stir it into the stew during the last 30 minutes of cooking.

Notes

  • Feel free to add other vegetables like peas or green beans.
  • For extra flavor, sear the beef in a skillet before adding it to the crock pot.
  • Leftover stew can be stored in the refrigerator for up to 3 days.
