- 1 lb Ground beef
- 2 tbsp Taco seasoning
- 8 Corn tortillas
- 1/4 cup Vegetable oil
- 2 cups Cabbage, shredded
- 1 cup Carrots, shredded
- 2, minced Chipotle peppers in adobo sauce
- 1/2 cup Mayonnaise
- 2 tbsp Lime juice
- to taste Salt
- 1/4 cup Fresh cilantro, chopped
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning to the beef and stir to combine. Cook for an additional 2-3 minutes.
- In a bowl, combine shredded cabbage, carrots, minced chipotle peppers, mayonnaise, lime juice, and salt. Mix well to make the chipotle slaw.
- In a separate skillet, heat vegetable oil over medium-high heat.
- Place a corn tortilla in the skillet and add a portion of the cooked beef on top. Smash down gently with a spatula to flatten.
- Cook for 2-3 minutes on each side until the tortilla is crispy and golden.
- Remove from heat and place on a paper towel to drain excess oil.
- Repeat with remaining tortillas and beef.
- Serve the crispy tacos topped with the chipotle slaw and garnish with fresh cilantro.
