Ingredients

  • 1 lb Ground beef
  • 2 tbsp Taco seasoning
  • 8 Corn tortillas
  • 1/4 cup Vegetable oil
  • 2 cups Cabbage, shredded
  • 1 cup Carrots, shredded
  • 2, minced Chipotle peppers in adobo sauce
  • 1/2 cup Mayonnaise
  • 2 tbsp Lime juice
  • to taste Salt
  • 1/4 cup Fresh cilantro, chopped

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning to the beef and stir to combine. Cook for an additional 2-3 minutes.
  3. In a bowl, combine shredded cabbage, carrots, minced chipotle peppers, mayonnaise, lime juice, and salt. Mix well to make the chipotle slaw.
  4. In a separate skillet, heat vegetable oil over medium-high heat.
  5. Place a corn tortilla in the skillet and add a portion of the cooked beef on top. Smash down gently with a spatula to flatten.
  6. Cook for 2-3 minutes on each side until the tortilla is crispy and golden.
  7. Remove from heat and place on a paper towel to drain excess oil.
  8. Repeat with remaining tortillas and beef.
  9. Serve the crispy tacos topped with the chipotle slaw and garnish with fresh cilantro.
