Ingredients

  • 2 whole branzino, cleaned and scaled
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 tablespoons capers, rinsed and drained
  • 1 lemon, juiced and zested
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the branzino dry with paper towels and season the inside and outside with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Once the oil is hot, add the branzino, cooking for about 4-5 minutes until the skin is crispy and golden brown.
  5. Carefully flip the fish and transfer the skillet to the oven. Bake for an additional 8-10 minutes or until the fish flakes easily with a fork.
  6. Meanwhile, in a small saucepan over medium heat, melt the butter. Add the capers, lemon juice, and lemon zest, stirring to combine. Cook for 2-3 minutes until heated through.
  7. Remove the branzino from the oven and drizzle with the lemon caper butter sauce.
  8. Garnish with fresh parsley and serve immediately.
