A deliciously crispy skin branzino topped with a flavorful lemon caper butter sauce.

- 2 whole branzino, cleaned and scaled
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 2 tablespoons capers, rinsed and drained
- 1 lemon, juiced and zested
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the branzino dry with paper towels and season the inside and outside with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Once the oil is hot, add the branzino, cooking for about 4-5 minutes until the skin is crispy and golden brown.
- Carefully flip the fish and transfer the skillet to the oven. Bake for an additional 8-10 minutes or until the fish flakes easily with a fork.
- Meanwhile, in a small saucepan over medium heat, melt the butter. Add the capers, lemon juice, and lemon zest, stirring to combine. Cook for 2-3 minutes until heated through.
- Remove the branzino from the oven and drizzle with the lemon caper butter sauce.
- Garnish with fresh parsley and serve immediately.
Notes
- Ensure the branzino is patted dry to achieve a crispy skin.
