- 2 cups sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt

- 8 ounces ahi tuna
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha
- for garnish green onions

Instructions
- Rinse the sushi rice under cold water until the water runs clear. Cook the rice with water according to package instructions.
- In a small bowl, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Mix this with the cooked rice and let it cool.
- Once cooled, spread the rice evenly in a square or rectangular dish and press it down firmly. Chill in the refrigerator for at least 1 hour.
- Cut the chilled rice into squares or rectangles.
- In a large skillet, heat vegetable oil over medium-high heat. Fry the rice pieces until golden brown and crispy on both sides. Drain on paper towels.
- In a mixing bowl, combine diced tuna, mayonnaise, and sriracha. Adjust the sriracha to taste for desired spice level.
- Top each crispy rice piece with a spoonful of the spicy tuna mixture.
- Garnish with sliced green onions and toasted sesame seeds before serving.
Notes
- For extra flavor, consider adding a dash of soy sauce to the spicy tuna mixture.
- Make sure the oil is hot enough before frying to ensure a crispy texture.
