Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook the rice with water according to package instructions.
  2. In a small bowl, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Mix this with the cooked rice and let it cool.
  3. Once cooled, spread the rice evenly in a square or rectangular dish and press it down firmly. Chill in the refrigerator for at least 1 hour.
  4. Cut the chilled rice into squares or rectangles.
  5. In a large skillet, heat vegetable oil over medium-high heat. Fry the rice pieces until golden brown and crispy on both sides. Drain on paper towels.
