Ingredients

- 1 cup cooked and cooled rice (preferably short grain)
- 1 avocado, diced
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup crispy rice cereal (for topping)
Instructions
- In a large bowl, combine the cooked rice, diced avocado, diced cucumber, red onion, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the rice mixture and toss gently to combine.
- Just before serving, sprinkle the crispy rice cereal on top for added crunch.
