Ingredients

  • 4 slices of prosciutto
  • 1 cantaloupe, halved, seeded, and cut into bite-sized pieces
  • 1 honeydew melon, halved, seeded, and cut into bite-sized pieces
  • 4 cups arugula or mixed greens
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the prosciutto slices on a baking sheet lined with parchment paper, making sure they do not overlap.
  3. Bake in the preheated oven for 10-12 minutes or until crispy. Remove from the oven and let cool.
  4. In a large bowl, combine the cantaloupe and honeydew melon pieces.
  5. Add the arugula or mixed greens to the bowl with the melon and gently toss to combine.
  6. Crumble the crispy prosciutto over the salad, followed by the feta cheese.
  7. Drizzle with balsamic glaze and season with salt and pepper to taste.
  8. Garnish with fresh mint leaves if desired. Serve immediately.
