- 4 slices of prosciutto
- 1 cantaloupe, halved, seeded, and cut into bite-sized pieces
- 1 honeydew melon, halved, seeded, and cut into bite-sized pieces
- 4 cups arugula or mixed greens
- 1/4 cup feta cheese, crumbled
- 2 tablespoons balsamic glaze
- Salt and pepper to taste
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the prosciutto slices on a baking sheet lined with parchment paper, making sure they do not overlap.
- Bake in the preheated oven for 10-12 minutes or until crispy. Remove from the oven and let cool.
- In a large bowl, combine the cantaloupe and honeydew melon pieces.
- Add the arugula or mixed greens to the bowl with the melon and gently toss to combine.
- Crumble the crispy prosciutto over the salad, followed by the feta cheese.
- Drizzle with balsamic glaze and season with salt and pepper to taste.
- Garnish with fresh mint leaves if desired. Serve immediately.
