These crispy chickpea and roasted vegetable wraps are a delicious and healthy option for lunch or dinner. Packed with flavor and nutrients, they are perfect for a quick meal.

- 1 can (15 oz) chickpeas, rinsed and drained
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups mixed vegetables (bell peppers, zucchini, carrots, etc.)
- 2 tablespoons balsamic vinegar
- 4 large whole wheat wraps
- 1 cup fresh spinach or mixed greens
- Hummus or your favorite spread
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them on a baking sheet.
- In another bowl, toss the mixed vegetables with balsamic vinegar, salt, and pepper. Spread them on a separate baking sheet.
- Roast both the chickpeas and vegetables in the oven for 20-25 minutes until crispy and golden, stirring halfway through.
- While the chickpeas and vegetables are roasting, prepare the wraps. Spread a layer of hummus on each wrap.
- Once the chickpeas and vegetables are done, remove them from the oven and let them cool slightly.
- Layer the roasted vegetables, crispy chickpeas, and fresh spinach on the wraps.
- Roll the wraps tightly, slice in half, and serve immediately.
