- 2 large russet potatoes, peeled and grated
- 1 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- 1 large egg, beaten
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- Cooking spray or oil, for the waffle iron
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions and spray it lightly with cooking spray or brush with oil.
- In a large bowl, combine the grated potatoes, cheddar cheese, green onions, beaten egg, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly combined.
- Scoop about 1/2 cup of the potato mixture into the preheated waffle iron, spreading it out evenly. Close the lid and cook for about 5-7 minutes, or until the waffles are golden brown and crispy.
- Carefully remove the waffle and repeat with the remaining potato mixture.
- Serve immediately with your favorite toppings, such as sour cream, additional green onions, or hot sauce.
