Ingredients

  • 4 salmon fillets
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish (optional)

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine.
  5. Add the chopped sun-dried tomatoes, spinach, parmesan cheese, and Italian seasoning. Cook until the spinach has wilted and the sauce is heated through.
  6. Return the salmon to the skillet, spooning the sauce over the fillets. Cook for an additional 2-3 minutes to warm the salmon.
  7. Garnish with fresh basil if desired and serve immediately.
