- 4 salmon fillets
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/2 cup parmesan cheese, grated
- 1 teaspoon Italian seasoning
- Fresh basil for garnish (optional)
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Add the chopped sun-dried tomatoes, spinach, parmesan cheese, and Italian seasoning. Cook until the spinach has wilted and the sauce is heated through.
- Return the salmon to the skillet, spooning the sauce over the fillets. Cook for an additional 2-3 minutes to warm the salmon.
- Garnish with fresh basil if desired and serve immediately.
