Ingredients

  • 8 oz rotini pasta
  • 1 lb ground beef
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped fresh cilantro or parsley for garnish (optional)

Instructions

  1. In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess grease if necessary.
  3. Add the can of Rotel diced tomatoes (with juices) to the skillet with the ground beef. Stir to combine.
  4. Reduce heat to medium and stir in the heavy cream, garlic powder, onion powder, salt, and pepper. Bring the mixture to a simmer.
  5. Once simmering, add the cooked pasta to the skillet and stir until well combined. Stir in the shredded cheddar cheese until melted and creamy.
  6. Serve immediately, garnished with chopped fresh cilantro or parsley if desired.

  • Feel free to add additional vegetables like bell peppers or onions for extra flavor.
