- 8 oz rotini pasta
- 1 lb ground beef
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped fresh cilantro or parsley for garnish (optional)
Instructions
- In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess grease if necessary.
- Add the can of Rotel diced tomatoes (with juices) to the skillet with the ground beef. Stir to combine.
- Reduce heat to medium and stir in the heavy cream, garlic powder, onion powder, salt, and pepper. Bring the mixture to a simmer.
- Once simmering, add the cooked pasta to the skillet and stir until well combined. Stir in the shredded cheddar cheese until melted and creamy.
- Serve immediately, garnished with chopped fresh cilantro or parsley if desired.

- Feel free to add additional vegetables like bell peppers or onions for extra flavor.
- For a spicier dish, use the hot variety of Rotel tomatoes.
