Description

This creamy roasted red pepper chicken is a delicious and easy dish that combines tender chicken with a rich and flavorful sauce made from roasted red peppers.

  • 4 boneless, skinless chicken breasts
  • 2 cups roasted red peppers, jarred or homemade
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. Add the chicken breasts to the skillet and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the roasted red peppers and heavy cream. Stir to combine and bring to a simmer.
  5. Return the chicken to the skillet, spooning the sauce over the top. Cover and transfer to the preheated oven.
  6. Bake for 20-25 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  7. Remove from the oven, garnish with fresh basil if desired, and serve hot.
