- 4 boneless, skinless chicken breasts
- 2 cups roasted red peppers, jarred or homemade
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
- Add the chicken breasts to the skillet and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the roasted red peppers and heavy cream. Stir to combine and bring to a simmer.
- Return the chicken to the skillet, spooning the sauce over the top. Cover and transfer to the preheated oven.
- Bake for 20-25 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove from the oven, garnish with fresh basil if desired, and serve hot.
