  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • Fresh sage leaves for frying
  • Extra Parmesan for serving

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium heat. Add sage leaves and fry until crispy, about 1-2 minutes. Remove and drain on paper towels.
  3. In the same skillet, add pumpkin puree, heavy cream, garlic powder, nutmeg, salt, and pepper. Stir to combine and let simmer for about 5 minutes until heated through.
  4. Add the cooked pasta to the pumpkin sauce, along with reserved pasta water a little at a time until desired creaminess is achieved.
  5. Stir in the grated Parmesan cheese until melted and combined.
