- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
- Fresh sage leaves for frying
- Extra Parmesan for serving
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
- In a large skillet, heat olive oil over medium heat. Add sage leaves and fry until crispy, about 1-2 minutes. Remove and drain on paper towels.
- In the same skillet, add pumpkin puree, heavy cream, garlic powder, nutmeg, salt, and pepper. Stir to combine and let simmer for about 5 minutes until heated through.
- Add the cooked pasta to the pumpkin sauce, along with reserved pasta water a little at a time until desired creaminess is achieved.
- Stir in the grated Parmesan cheese until melted and combined.
- Serve immediately, topped with crispy sage and additional Parmesan cheese.
