- 2 cups cooked chicken, shredded
- 1/2 cup pesto sauce
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 6 large tortillas
- Olive oil for brushing
- Fresh basil for garnish (optional)
Instructions
- In a large mixing bowl, combine the shredded chicken, pesto sauce, cream cheese, mozzarella, and Parmesan. Mix until well combined. Season with salt and pepper to taste.
- Lay out the tortillas on a flat surface. Divide the chicken mixture evenly among the tortillas, placing it in the center of each one.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
- Preheat a skillet over medium heat. Brush the outside of each tortilla with olive oil.
- Place the stuffed tortillas seam-side down in the skillet. Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and let cool for a minute. Slice in half and garnish with fresh basil if desired.
