  • 1 tablespoon butter
  • 4 medium potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh chives for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil and butter over medium heat.
  2. Add the chopped leeks and sauté until softened, about 5-7 minutes.
  3. Stir in the diced potatoes and cook for another 2-3 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  6. Using an immersion blender, blend the soup until smooth and creamy.
  7. Stir in the heavy cream and season with salt and pepper to taste.
