- 1 cup wild rice
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup half-and-half
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned.
- Remove chicken from the pot and set aside.
- In the same pot, add onion, carrots, and celery; sauté until softened.
- Stir in garlic and cook for an additional minute.
- Add chicken broth and bring to a boil.
- Stir in wild rice and return the chicken to the pot.
- Reduce heat and let it simmer for 30-40 minutes until rice is tender.
- Stir in half-and-half and season with salt and pepper.
- Let it simmer for another 5 minutes.
- Serve hot, garnished with fresh herbs.
