Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 2 tablespoons olive oil
  • 8 ounces sliced mushrooms
  • 3 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped, for garnish

Instructions

  1. Season chicken breasts with salt and pepper, then dredge in flour, shaking off excess.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown on both sides, about 5-6 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add sliced mushrooms and cook until browned, about 5 minutes. Add minced garlic and cook for an additional minute.
  4. Pour in Marsala wine and scrape up any browned bits from the bottom of the skillet. Allow the wine to reduce by half.
  5. Add chicken broth, heavy cream, and dried thyme. Stir to combine and bring to a simmer.
  6. Return the chicken to the skillet and simmer until cooked through and sauce thickens, about 5-7 minutes.
  7. Garnish with fresh parsley before serving.
