- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 4 cups chicken broth
- 1 pound cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Stir in dried thyme and oregano, cooking for another minute until fragrant.
- Pour in the chicken broth and bring to a simmer. Add the shredded chicken and gnocchi, cooking according to package instructions until the gnocchi float to the top.
- Reduce heat to low and stir in the heavy cream. Add spinach and cook until wilted, about 2-3 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with Parmesan cheese if desired.
Notes
- For added flavor, consider using rotisserie chicken.
- This soup can be stored in an airtight container in the fridge for up to 3 days.
- Reheat gently on the stove, adding a splash of broth or water if the soup thickens too much.
