  • 4 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  2. Stir in dried thyme and oregano, cooking for another minute until fragrant.
  3. Pour in the chicken broth and bring to a simmer. Add the shredded chicken and gnocchi, cooking according to package instructions until the gnocchi float to the top.
  4. Reduce heat to low and stir in the heavy cream. Add spinach and cook until wilted, about 2-3 minutes.
  5. Season with salt and pepper to taste. Serve hot, garnished with Parmesan cheese if desired.

Notes

  • For added flavor, consider using rotisserie chicken.
