Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 2 cups green beans, trimmed and cut into 1-inch pieces
- 2 cups kale, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the minced garlic, thyme, and rosemary. Cook for an additional minute until fragrant.
- Add the diced tomatoes and vegetable broth. Bring to a boil.
- Once boiling, reduce the heat and let simmer for 10 minutes.
- Add the green beans and kale. Simmer for another 10 minutes or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.

- Feel free to add any other seasonal vegetables you have on hand.
