  • 4 cups vegetable broth
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
  3. Stir in the minced garlic, thyme, and rosemary. Cook for an additional minute until fragrant.
  4. Add the diced tomatoes and vegetable broth. Bring to a boil.
  5. Once boiling, reduce the heat and let simmer for 10 minutes.
  6. Add the green beans and kale. Simmer for another 10 minutes or until the vegetables are tender.
  7. Season with salt and pepper to taste.
