Description
This hearty vegetable soup is the perfect cozy dinner recipe for fall. Loaded with seasonal veggies and warm spices, it’s a comforting dish that warms you from the inside out.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, diced
- 2 celery stalks, diced
- 1 medium sweet potato, peeled and diced
- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup kale, chopped
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the carrots, celery, and sweet potato to the pot. Sauté for about 5-7 minutes until they begin to soften.
- Stir in the zucchini, diced tomatoes, vegetable broth, thyme, basil, salt, and pepper. Bring to a boil.
- Reduce the heat and let the soup simmer for 25-30 minutes, or until the vegetables are tender.
- Add the chopped kale and cook for another 5 minutes until wilted.
- Serve warm with crusty bread or crackers.
Notes
- Feel free to add any seasonal vegetables you have on hand.
- This soup can be made ahead of time and stored in the fridge for up to 3 days.
