Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium sweet potato, peeled and diced
  • 1 zucchini, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup kale, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the carrots, celery, and sweet potato to the pot. Sauté for about 5-7 minutes until they begin to soften.
  4. Stir in the zucchini, diced tomatoes, vegetable broth, thyme, basil, salt, and pepper. Bring to a boil.
  5. Reduce the heat and let the soup simmer for 25-30 minutes, or until the vegetables are tender.
  6. Add the chopped kale and cook for another 5 minutes until wilted.
  7. Serve warm with crusty bread or crackers.

Notes

  • This soup can be made ahead of time and stored in the fridge for up to 3 days.
