Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  5. Add the sun-dried tomatoes, spinach, and Italian seasoning. Let it simmer for 3-4 minutes until the spinach wilts.
  6. Stir in the Parmesan cheese until melted and creamy. Return the chicken to the skillet and coat with the sauce.
  7. Garnish with fresh basil before serving.
