- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/2 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Add the sun-dried tomatoes, spinach, and Italian seasoning. Let it simmer for 3-4 minutes until the spinach wilts.
- Stir in the Parmesan cheese until melted and creamy. Return the chicken to the skillet and coat with the sauce.
- Garnish with fresh basil before serving.
