Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup spinach
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Sear the chicken in the skillet for about 5-7 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add chicken broth and bring to a simmer.
  7. Stir in heavy cream, spinach, cherry tomatoes, and Parmesan cheese, mixing well.
  8. Return the chicken to the skillet, spooning some of the sauce over the top.
  9. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  10. Garnish with fresh basil before serving.
