A refreshing and flavorful dish perfect for warm weather, Cold Sesame Noodles are tossed in a rich sesame sauce and topped with fresh vegetables.


Ingredients

  • 8 oz noodles (spaghetti or Asian noodles)
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp peanut butter
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup cucumber, julienned
  • 1/2 cup carrots, julienned
  • 2 green onions, chopped
  • Sesame seeds for garnish

Instructions

  1. Cook the noodles according to package instructions. Drain and rinse under cold water to cool.
  2. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, peanut butter, honey, garlic, ginger, and red pepper flakes until smooth.
  3. In a large bowl, combine the cooled noodles with the sauce. Toss until the noodles are evenly coated.
  4. Add the cucumber, carrots, and green onions to the noodles. Toss gently to combine.
  5. Serve the noodles chilled, garnished with sesame seeds.

Notes

  • Feel free to add your favorite vegetables like bell peppers or edamame.
  • For a protein boost, add cooked chicken, shrimp, or tofu.
