A refreshing and flavorful dish perfect for warm weather, Cold Sesame Noodles are tossed in a rich sesame sauce and topped with fresh vegetables.

- 8 oz noodles (spaghetti or Asian noodles)
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp peanut butter
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1 tsp ginger, grated
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup cucumber, julienned
- 1/2 cup carrots, julienned
- 2 green onions, chopped
- Sesame seeds for garnish
Instructions
- Cook the noodles according to package instructions. Drain and rinse under cold water to cool.
- In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, peanut butter, honey, garlic, ginger, and red pepper flakes until smooth.
- In a large bowl, combine the cooled noodles with the sauce. Toss until the noodles are evenly coated.
- Add the cucumber, carrots, and green onions to the noodles. Toss gently to combine.
- Serve the noodles chilled, garnished with sesame seeds.
Notes
- Feel free to add your favorite vegetables like bell peppers or edamame.
- For a protein boost, add cooked chicken, shrimp, or tofu.
