  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the flour, salt, black pepper, garlic powder, and paprika.
  3. In another bowl, whisk the eggs until well beaten.
  4. In a third bowl, mix the shredded coconut and panko breadcrumbs together.
  5. Pat the shrimp dry with a paper towel. Dip each shrimp into the flour mixture, shaking off excess, then into the egg, and finally into the coconut-panko mixture, pressing gently to adhere.
  6. Thread the breaded shrimp onto the soaked wooden skewers.
  7. Place the skewers on the prepared baking sheet and spray lightly with cooking spray.
  8. Bake in the preheated oven for 12-15 minutes, or until the shrimp are cooked through and the coating is golden brown.
  9. Serve with a dipping sauce of your choice, such as sweet chili sauce or a tangy lime dip.
