- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Wooden skewers, soaked in water for 30 minutes
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, combine the flour, salt, black pepper, garlic powder, and paprika.
- In another bowl, whisk the eggs until well beaten.
- In a third bowl, mix the shredded coconut and panko breadcrumbs together.
- Pat the shrimp dry with a paper towel. Dip each shrimp into the flour mixture, shaking off excess, then into the egg, and finally into the coconut-panko mixture, pressing gently to adhere.
- Thread the breaded shrimp onto the soaked wooden skewers.
- Place the skewers on the prepared baking sheet and spray lightly with cooking spray.
- Bake in the preheated oven for 12-15 minutes, or until the shrimp are cooked through and the coating is golden brown.
- Serve with a dipping sauce of your choice, such as sweet chili sauce or a tangy lime dip.
Notes
- For extra flavor, marinate the shrimp in coconut milk for 30 minutes before breading.
- You can also grill these skewers for a smoky flavor; just be sure to soak the skewers to prevent burning.
