- 1/2 cup raspberries (fresh or frozen)

- 1 tablespoon maple syrup (optional)

- Pinch of salt
- Shredded coconut for topping
Instructions
- In a medium bowl, combine rolled oats, coconut milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt.
- Stir well to combine all ingredients.
- Gently fold in the raspberries, being careful not to mash them.
- Divide the mixture into jars or containers with lids.
- Seal the containers and refrigerate overnight (or for at least 4 hours) to allow the oats to soak and thicken.
- In the morning, give the oats a good stir and add more coconut milk if needed to reach your desired consistency.
- Top with shredded coconut and additional raspberries before serving.
