- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1/2 cup water
- 1 tablespoon lime juice
- Zest of 1 lime
- 1/2 teaspoon salt
- Fresh cilantro, for garnish (optional)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, lime juice, lime zest, and salt.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork and garnish with fresh cilantro if desired before serving.
Notes
- For a richer coconut flavor, use full-fat coconut milk.
- Adjust the lime juice and zest to taste for a more pronounced citrus flavor.
