Ingredients

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup water
  • 1 tablespoon lime juice
  • Zest of 1 lime
  • 1/2 teaspoon salt
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, lime juice, lime zest, and salt.
  3. Bring the mixture to a boil over medium-high heat.
  4. Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
  5. Remove from heat and let it sit covered for an additional 5 minutes.
  6. Fluff the rice with a fork and garnish with fresh cilantro if desired before serving.

Notes

  • For a richer coconut flavor, use full-fat coconut milk.
  • Adjust the lime juice and zest to taste for a more pronounced citrus flavor.
